Mackerel Fajitas
Ingredients - serves 4
4 x 145g [5oz] 'ready to eat' smoked mackerel fillets, fresh or defrosted, skinned and flaked
1 x tbsp [15ml] olive oil
1 x garlic clove, crushed
1/2 red and /or green pepper cut into strips
150ml [5 fl oz] passata
pinch of ground cumin
1 x tsp [5ml] tomato puree
juice of 1/2 a lime
4 small soft tortillas
1 x 5cm [2inch] stick cucumber, diced
spoonfuls of creme fraiche, fromage frais or natural yoghurt to serve
spring onion, to garnish
Method
1) Soften the garlic and red pepper in the olive oil.
2) Add the passata, cumin and tomato puree. Cook over a low heat until reduced and thickened.
3) Add the lime juice and stir in the fish.
4) Warm the tortillas, then spoon the fish mixture onto one half of each. Top the filling with the cucumber and spoon over a little crème fraiche. Fold the tortilla over to encase the filling.
5) Garnish and serve
